STEALING FROM THE BAR

According to an article in "The Electric Newpaper", over $30 million dollars a year is stolen by bar staff. It may not seem like much when you take into consideration that the bar industry takes in about $3 billion a year but some bar staff have been able to keep themselves pretty happy with these dishonest techniques. Some of the techniques discussed in this article include;
  • One for you one for me. - a customer orders two drinks but the bartender rings in one and pockets the money for the other.
  • Groundhog bill - reusing the same bill over and over and pocketing the cash. For instance, a customer pays their bill and you ring it in normally. That bill is now recorded as paid. The server keeps the bill and hands it to their next customer who would have a similar charge and keeps the cash.
  • Short pouring - The owner expects to get a certain amount of drinks out of a bottle or keg. If the bartender short pours he is able to get more than the expected number of drinks and pockets the money made from the extra ones.
  • BYOB - The bartender brings in his own bottle of booze and keeps the cash from any drinks he makes with it.


There are hundreds of other ways to steal from the bar. I know, I've seen them, but why would you risk it? If you're a good bartender/server you probably make good money in tips anyway. Don't get greedy. Some people say "My boss cheats me out of money so it's only fair that I recoupe my money". Bullshit, if you think you're boss is stealing from you or is other wise dishonest, leave. If you choose to stay there then you choose to be cheated. On the same note, if you're a bar owner/manager and you treat your employees like shit, expect to be cheated you bastard.

my ( food and bev ) manager is marring licqur!!!! i am sure of this. when i ( rec ) a bottel of anything it is opend, and to full! the baiely,s iris cream is thin! plus it is the same ( cream staiend bottel of 4 mts, ever heard of (mccomicks) irish cream? well that is what is going in to the real deal! smiernoff in to absolut..etc.the prob is i work in a well knowen hotel. a lot of cover-up is going on so corporate does not knowi have been there 24 yrs, and have never seen such coruption ever! i am 50 yrs and still am a gret bartender!!!!! LOTS OF BULLSHIT AWARDS BLA BLA BLA. THAT MEANS ( 0) TO ME. I JUST WHAT TO DO A GOOD JOB, AND HAVE MY BOSS BE HONEST!!!!!ANY IDEA ON WHAT I CAN DO? SOORY ABOUGHT MISS-SPELL KAT IN GA.

I would call the Alcohol Tobacco and Firearms (ATF)department in your state. Also the Alchoholic Beverage Commission (ABC). I'm pretty positive that what he is doing is extremely illegal.

Owners beware! Today most of us use intelligent POS software. To void, ENT and discount on such systems generally the manager will have a higher access code. However it is all to common for managers to abuse these privaledges by recalling a closed cash check and deleting all menu items to a legitiamte void reason. Then they will close off the check to zero cash. Now of course the till cash sales will be over so the manager pockets the cash to balance the till. This is very very common. More cash theft results from manager abuse than general staff. Make the effort to use your POS reports to track who accesses what and when and why and never give a manager recall check facility authorisation unless you have thoroughly tested their honesty.

Like mechanic's and plumber's, we as bartenders have a fiduciary duty to perform. I would like to know WHO in the world put a bartender on a pedal stool? WE ARE SERVERS!! Love it or leave it! I have watched (not silently) bartenders take advantage of drunk patrons! SINNERS!! I hope anyone who STEALS from someone that is trusting them with THEIR money gets it in the butt ten fold!
You are a disgrace to those of us that take our bar and our patrons to heart! Protecting them and the bar from idiots like you!
Push come to shove, you are nothing but a low life thief!

I worked a satellite bar on St. Patrick's day and sold over $1720. I only made $160 after my barback's tip out. The other girl downstairs where it wasn't nearly as busy rang in $850 and made over $600. Does that sound fishy or what? What angers me most is that the managers don't seem to notice. It happens all the time and they just ignore it.
